Chocolate Chip Cookies That Never Go Stale



The world is full of cookie recipes. I’ve tried pumpkin spice cookies, raspberry white chocolate cookies, peanut butter cookies, chai cookies and speculoos cookies. But have you ever heard of a frozen chocolate chip cookie? Imagine a thin cookie that defrosts within seconds and melts (quite literally) in your mouth. The following recipe has been a specialty in my family for over 25 years. Across generations, the tricks of the trade have been passed down and refined, and it’s time to share them with you. Although they are best frozen, they are equally delicious fresh from the oven.
MEDIUM
Prep time: 15 minutes
Cook time: 5-7 minutes
Total time: 25 minutes
Servings: 3 dozen cookies
Ingredients:
1 2/3 cup all purpose flour (not self rising)
1 cup caster sugar
1 cup light brown sugar
1 teaspoon baking soda
¾ teaspoon salt 
1 teaspoon vanilla extract
2 sticks of softened unsalted butter
2 eggs
12 oz. Nestle chocolate chip morsels
